8 chicken drumsticks
2 tablespoons Extra Virgin Olive Oil
1 teaspoon Kosher Flake Sea Salt
2 teaspoons light chili powder
2 teaspoons dark chili powder
1/4 to 1/2 teaspoon mild cayenne pepper
1/2 teaspoon fresh ground pepper
Preheat your oven to 400° F. Line a baking sheet with parchment paper.
Wipe the chicken drumsticks dry with paper towels and set drumsticks aside.
In a small bowl, combine the olive oil, salt, chili powders, and black pepper to create a paste. Pour the mixture over the chicken pieces and coat the chicken well on all sides and arrange them in a single layer on the baking sheet.
Bake the drumsticks until cooked through and juices run clear, about 40 minutes to an internal temperature of 165°.
Remove from the oven and seal tightly with foil and let rest for 5-10 minutes before serving for incredibly moist chicken.
