Belgian Waffles or Liege Waffles with Lavender Honey Butter

1 egg yolk
1 cup of sour cream
½ cup milk
3 tablespoons of melted butter
1 cup sifted all-purpose flour
2 teaspoons caster sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon Kosher Flake Sea Salt
1 stiffly beaten egg white
2/3 cup crushed The Spice and Tea Shoppe’s Belgian Rock Sugar


Preheat waffle iron.

In electric mixer bowl blend egg yolk, sour cream, milk and melted butter. Sift together flour, 2 teaspoons sugar, baking powder, baking soda, and salt. Stir sifted dry ingredients into sour cream mixture; beat smooth in electric mixer. Fold in stiffly beaten egg whites and crushed Belgian Rock Sugar, leaving a few fluffs – don’t over mix.

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot with Lavender Honey Butter.

Lavender Honey Butter

4 tablespoons of softened unsalted butter
1 teaspoons of ground French Lavender
1 teaspoon of whole The Spice and Tea Shoppe’s French Lavender
1 teaspoon of The Spice and Tea Shoppe’s Honey Powder

Beat together softened unsalted butter, ground lavender, and honey powder. Fold in whole lavender. Set aside until waffles are ready.
