Ingredients:

2 1/4 cups All-Purpose Flour
1 tablespoon Baking Powder
3 tablespoons  Sugar
½ teaspoon Salt
1 teaspoon Saigon Cinnamon
2 Large Eggs, Separated
1/2 cup Vegetable Oil
2 cups Milk
1 teaspoon Vanilla Extract

Instructions:

Preheat your waffle iron to 375°F or medium-high, spray it with non-stick cooking spray, close lid to keep hot.

In a large bowl, whisk together the all-purpose flour, baking powder, sugar, salt, and cinnamon.

In a medium bowl, beat the egg whites with a hand mixer until stiff peaks form. Set aside.
