Chamomile and Lavender Infused Honey

Sweet golden honey infused with chamomile and lavender is excellent to sweeten your favorite tea or sooth a scratchy throat. 


1/4 cup dried Egyptian Chamomile 
1/4 cup dried French Lavender 
1 cup honey


In a small saucepan warm the honey slowly over medium low heat until melted, about 5 minutes. Place chamomile and lavender at the bottom of the glass jar and lightly crush with the back of a spoon. When honey is warmed and liquid pour it over the botanicals and close the lid tightly. Place honey in a dark cabinet and let the botanicals infuse for at least 2 weeks turning the jar over each day to keep them well coated with the honey or they will settle on the top of the jar.

After 2 weeks it is time to remove the botanicals from the honey. Fill the bottom of a small saucepan with 1- 2 inches of hot water and place the jar of honey, without the lid, in the water. Warm the honey slowly over medium low heat until melted, about 5 minutes. Strain liquid honey with a fine mesh strainer into a clean glass jar. Some small particles of chamomile and lavender will pass through the strainer but as the honey cools they will rise to the top where you can scoop them out if you prefer.

Store in a cool, dry place.
