1 tablespoon Extra Virgin Olive Oil
1/2 cup chopped onion
1 cup orange juice
1 teaspoon Poultry Stuffing and Seasoning Blend
1/4 teaspoon fresh ground Black Peppercorns
1 tablespoon soy sauce
3 tablespoons (packed) brown sugar
6 to 8 boneless chicken thighs (if using bone in increase cooking time by 10 - 15 minutes)
Heat oven to 375 F.
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Sauté the onion until softened. Add orange juice, Poultry Stuffing and Seasoning Blend, a dash of pepper, soy sauce, and brown sugar. Simmer, stirring frequently, for 5 minutes.
Pat chicken dry with paper towels. Arrange in a foil-lined greased baking dish.
Brush lightly with olive oil and sprinkle with salt and pepper.
Bake for 20 minutes.
Liberally brush the sauce over the chicken thighs and bake for 15 to 20 minutes longer or until cooked through.
Bring the remaining sauce to a boil and reduce by half until a syrup type glaze remains. Brush remaining glaze over chicken just before serving.
These can also be grilled just make sure to continue to brush glaze over chicken while cooking to keep moist. Optionally you can slice oranges and grill as well for a pretty presentation.
