Cucumber Salad With Feta, Sumac and Greek Seasoning

Description

This is my take on a traditional Persian salad. Though somewhat similar to a Greek salad the addition of the lemony sumac gives it a distinctly different flavor than the Greek. A heart healthy go to for those following the Mediterranean diet or just looking for a tasty and refreshing salad.

Ingredients:

2 pounds Persian or English cucumbers, peeled
Salt and pepper
1/2 teaspoon finely chopped garlic*
1 tablespoon fresh lemon juice*
2 tablespoons Extra Virgin Olive Oil *
4 ounces feta, cut into rough 1/2-inch cubes
1 1/2 teaspoons Ground Sumac
1 1/2 teaspoons Greek Seasoning

Optional add ins:

Chopped tomatoes
Slices of purple onion
Kalamata olives - pitted, whole or sliced
Sweet bell peppers, chopped
Marinated artichoke heart
Pinch of Red Pepper Flakes, Fresh parsley and fresh mint to garnish

*When adding a lot of optional add ins I double the amount of olive oil and lemon for dressing and adjust seasonings to taste.

Directions:

Halve cucumbers lengthwise and slice into 1/2-inch pieces. Place in a large bowl and season with salt and pepper. Add feta any other add ins to bowl.

In small bowl stir garlic, lemon juice, olive oil together and pour over salad.

Sprinkle with sumac and Greek Seasoning toss to coat. Taste and adjust seasoning.

Transfer to a serving platter.

Just before serving, sprinkle with mint, parsley or crushed red pepper.
