Cucumber Tea Sandwiches

20 slices bread
1/2 cup cream cheese
3 tablespoons sour cream
1 tablespoon apple cider vinegar
1/2 teaspoon Worcestershire sauce
1/2 teaspoon Mediterranean Sea Salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
20 slices cucumber
1 tablespoon roasted red pepper , minced
Fresh dill , for garnish
Chives , for garnish


Combine softened cream cheese, sour cream, apple cider vinegar, Worcestershire sauce, fine sea salt, garlic powder and onion powder and mix well with stand mixer or hand blender and set aside.

Cut all the crusts off of your bread slices and set aside. 

Slice cucumbers very thin preferably with a mandolin if you have one and set on paper towels to absorb extra moisture.

Lightly coat each bread piece with the cream cheese mixture.

Place thin cucumber slices on each bread piece.

Cut sandwiches corner to corner into triangles.

Top each with fresh dill sprigs, minced roasted red pepper and/or chives or smoked salmon.


Dry the leftover crust pieces and process them in the food processor with 1 teaspoon Italian Seasoning for Italian bread crumbs to use as breading later.
