Easy Blueberry Cobbler

Description

With a golden, buttery cobbler crust and an abundant filling of sweet blueberries, each bite delivers a delightful burst of flavor. You can substitute or combine a variety of fresh fruits like peaches, diced plums and blackberries or raspberries depending on availability which makes for new and delicious flavor combinations each time.

Ingredients:

4 cups fresh or frozen blueberries
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon Kosher Flake Sea Salt
1/2 cup milk
1/4 cup unsalted butter, melted
1 teaspoon Madagascar "Bourbon Islands" Vanilla Extract
1/2 teaspoon Ceylon Cinnamon 

Vanilla ice cream or whipped cream for serving (optional)

Directions:

Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish or a similar-sized oven-safe dish.

Rinse the blueberries and remove any stems or leaves. If you're using frozen blueberries, thaw them and drain any excess liquid.

In a mixing bowl, combine the flour, 3/4 cup of sugar, baking powder, and salt. Mix well.

Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined. The batter may be slightly lumpy, but that's okay.

Spread the blueberries evenly in the greased baking dish. If desired, you can sprinkle them with 1/4 cup of sugar and cinnamon for added sweetness and flavor.

Pour the batter over the blueberries, spreading it out to cover most of the fruit. It's alright if some berries are peeking through.

Bake in the preheated oven for about 40-45 minutes or until the cobbler topping turns golden brown and the blueberries are bubbly.

Remove from the oven and let it cool for a few minutes before serving. The cobbler is best enjoyed warm. You can serve it as is or with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.

Leftovers can be stored in an airtight container in the refrigerator for a few days. Reheat in the oven or microwave before serving.
