Description
A heart healthy recipe based on the traditional Mediterranean diet. Summer usually brings a bounty of tomatoes and this is a classic simple way to enjoy them. If you cannot find heirloom tomatoes fell free to use any type. Look for those which are firm and not over-ripe or they may fall apart. Another way to keep this from happening is to make the slices a little thicker.
Ingredients:
1/4 cup Extra Virgin Olive Oil - unflavored
2 tablespoons Sweet White Balsamic Vinegar
1 teaspoon Cask Aged 10 or 25 Year Balsamic Vinegar for drizzle
1/2 teaspoon French Fleur de Sel Sea Salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon Italian Seasoning Blend
2 pounds heirloom tomatoes sliced
1 pint cherry tomatoes halved
1/2 cup fresh basil leaves roughly chopped or torn
Directions:
Whisk the olive oil, vinegar, sea salt, pepper and Italian Seasoning together in a large mixing bowl.
Add the tomatoes and fresh herbs to the bowl and gently toss until combined.
Allow the salad to marinate for at least 15 -20 minutes.
Arrange tomato slices on a serving dish and pour remaining marinade over the top.
Finish with a delicate drizzle of dark balsamic before serving.
