White Teas

White loose leaf tea is the most minimally processed tea of all the loose leaf varieties. As soon as the leaves, also known as buds, are plucked they are allowed to naturally wither and air dry in the sun or in a controlled indoor-outdoor facility. Minimal oxidation naturally occurs during this process, but far less than what is typical for black teas, and it is because of this that white loose leaf teas have a much more delicate and softer flavor profile.

  • Silver Needles, Yin Zhen,  is a white tea produced in the Fujian Province in China. This first flush harvest was plucked in late March and early April producing young buds that are light green in color and covered with downy hair that creates a velvet like appearance. It steeps a sweet, some may detect subtle notes of peach, apricot and honey, delicate cup with a savory mouth feel. There is simply nothing that compares to quality Silver Needles from the Fujian Province. Steep: 1-1.5 tsp, 185 degrees for 2 Minutes

  • White Peony, Bai Mu Dan, is a very popular white tea in China and now abroad. White teas are made only from the newly sprouted buds of the tea plant that provide a honey texture to the brew. Classic style White Peony is made in April, when the young bud and one leaf set is at its most flavorful. The buds have distinct white hair that makes the brew texture smooth and refined.
