Description

While mace and nutmeg are related as they both come from the same tree, they are quite different in taste, aroma and harvesting methods. Mace itself grows as a netting that covers the fruit that inside holds the seed which is nutmeg. The mace which is called the aril makes up a delicate lacey cocoon cradling the fruit until it is ready to be harvested.

Once harvested this delicate lacey outside is very tenderly removed by hand and is dried in the sun for about 2 weeks before it is ready to be used. It is a labor intensive process and once dried each aril net only a small amount of mace.

Ground Mace delivers a more delicate, nutmeg-like aroma, but with a flavor that hints at delicate notes of cinnamon and light pepper as well. It's flavor pairs perfectly with other warm spices like cardamom, cinnamon and clove and is important in Indonesian, Asian and Caribbean recipes. Excellent in baked goods like fruitcake and pound cakes as well as savory dishes like potatoes au-gratin, sauces, soufflés and fish and poultry dishes. Add a pinch or two to homemade sausage, meatballs and lamb dishes, soups, stuffing, sweet potato pie or barbeque sauces for that secret ingredient that all will love but few will easily be able to identify. Great in cheese or cream-based dishes, especially pasta sauces.
