Mediterranean Lamb Chops

3 tablespoons Extra Virgin Olive Oil
½ large lemon – juiced
2 tablespoons Lamb Rub
1 ½ pounds lamb chops – 4 to 6 chops


Put olive oil and lemon juice in shallow pan and mix well. Brush the chops with olive oil and lemon juice mix and season liberally on both sides with Lamb Rub and refrigerate for at least 1 hour and up to 4 hours.

On a preheated gas grill, grill the lamb chops on high for 6-7 minutes, turning over once. Make certain not to overcook. Optimal temperature for lamb is 145 °F for medium rare and 160 °F for medium. Salt and pepper to taste.
