Summer isn't quite over and fall has not yet arrived but this Oat and Plum Tea Cake bridges the seasons beautifully.
2 cups all-purpose flour
3/4 cup granulated sugar
3 teaspoons baking powder
1 teaspoon Kosher Flake Sea Salt
1/2 teaspoon baking soda
1/2 teaspoon ground Saigon Cinnamon
1/4 teaspoon Ground Grenada Nutmeg
1/8 teaspoon Ground Ginger
1 cup quick cooking oats
1 cup fresh plums, pitted and diced (not dried prunes)
2 large eggs, beaten
1 cup milk
1/4 cup canola oil
Preheat oven to 350°F.
Coat a 9x5x3-inch loaf pan with non-stick cooking spray.
Mix together flour, sugar, baking powder, salt, baking soda, cinnamon, nutmeg and ginger in a large bowl.
Add oatmeal and plums, and stir to coat the plums.
In another bowl, combine eggs, milk and oil. Add to flour mixture and stir until dry ingredients are just moistened.
Pour into prepared pan and bake 1 hour.
Cool in pan 10 minutes; remove to rack and cool completely before serving.
