2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon Garlic Powder
1/2 teaspoon Kosher Flake Sea Salt
1 teaspoon Italian Seasoning
1 teaspoon Dried Shallots
1 teaspoon Dried Chives
1/2 cup unsalted butter, left whole and very, very cold (1 stick)
3/4 cup buttermilk
1 cup shredded cheddar cheese
1/3 cup crumbled bacon or ham


Preheat the oven to 425°F.

Line a baking sheet with parchment paper or a silicone baking mat.

In a large bowl, combine the flour, sugar, baking powder, garlic powder, salt, and Italian seasoning.

Grate the cold butter with a cheese grater into the bowl. Using your fingers, work the butter into the dry ingredients until crumbly. Alternatively, you can use a food processor and pulse in short bursts.

Stir in the buttermilk, cheese, bacon (or ham), shallots, and chives until a soft dough forms.

Working on a lightly floured surface, knead the dough 3-4 times until it comes together.

Using a rolling pin, roll the dough into an 8-10 inch circle, about 1 inch thick, and cut into 8 wedges.

Place the scones onto the prepared baking sheet.

Place them in the oven and bake for 18-20 minutes, or until lightly browned.

Serve warm.
