Ingredients:

3-4 pounds chicken leg quarters with skin on
4 tablespoons unsalted butter, softened
2 tablespoons Wildflower Traditional Honey
2 teaspoons dried French Thyme
2 tablespoons Lavender Flower Water
Kosher Flake Sea Salt (to taste)
French Peppercorn Blend fresh ground or other lighter pepper such as Tellicherry (to taste)
Optional lemons to garnish

Directions:

Preheat the oven to 375°F (190°C).

In a small bowl, combine softened butter, honey, thyme leaves, lavender water, salt, and pepper.

Gently loosen the skin of the chicken and spread the butter mixture evenly under the skin.

Place the chicken on a roasting pan and roast for approximately 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 10 minutes before carving.
