Ingredients:

4-5 medium-sized red beets, peeled and thinly sliced
1 cup white vinegar
1 cup water
2 tablespoons sugar
1 tablespoon Kosher Flaked or Mediterranean Sea Salt
1 teaspoon 5-color peppercorns
2-3 cloves of garlic, peeled and lightly crushed

Instructions:

In a medium saucepan, combine the white vinegar, water, sugar, salt, and 5-color peppercorns.

Bring the mixture to a gentle boil, stirring until the sugar and salt are fully dissolved.

Allow the brine to cool to room temperature.

Meanwhile, prepare the red beets by peeling them and thinly slicing them. You can use a mandoline or a sharp knife for this.

Place the sliced beets and crushed garlic cloves in a clean, sterilized glass jar.

Once the brine has cooled, pour it over the sliced beets and garlic in the jar, ensuring that the beets are fully submerged.

Seal the jar with a tight-fitting lid and place it in the refrigerator.

Allow the pickled beets to marinate for at least 24 hours before enjoying.

The longer they marinate, the more intense the flavors will become.
