This Pumpkin Butter is a sweet with the warm spices of fall and winter - perfect to serve over scones, pumpkin bread, waffles or biscuits.
1 (29 ounce) can pumpkin puree
3/4 cup apple juice
1 tablespoon Pumpkin Pie Spice Blend
1 1/2 cups white sugar
Combine pumpkin, apple juice, spices, and sugar in a large heavy bottomed saucepan; stir well. Bring mixture to a boil. Reduce heat to low and simmer for 30 minutes or until thickened and dark. Stir frequently to avoid scorching.
Transfer to hot canning jars, wipe threads on jars to make sure they are clean, put lids on and invert on the counter until cooled. Test to make sure jars have sealed by pressing down on the center. If not sealed store in refrigerator until serving.
